Gluten-Free Tortillas for Taco Tuesday!

Gluten Free Tortilla

Here's a quick and easy recipe to liven up your taco Tuesday! These tortillas are simple and scrumptious! 2 cups Cassava Flour (easily found on Amazon or at Whole Foods) 6 tablespoons of EVOO (extra virgin olive oil) 1 cup warm water 1 1/2 teaspoon salt 1-2 teaspoons garlic powder 1/2 teaspoon paprika Heat up a griddle or non stick pan to medium to high heat on your stove. Mix all ingredients together until a dough forms. Take about golf ball size balls off of dough and roll out between two sheets of parchment paper until about an 1/8th of an inch thick. Use a water glass to cut out a street taco size tortilla. Place the tortilla on the griddle/pan and heat about 1-2 minutes on each side. You will see air pockets start to form. For an extra flavor kick, cook the tortillas in butter! Enjoy with your favorite taco toppings!
